Brownies are everyone’s best friend and can greatly assist with almost all of life’s challenges. I was recently preparing for a crazy week at work and knew it would be a big week for myself and all of my team so in an attempt to soften the blow of a Monday I arrived at work with these delicious Milo Brownies.
I will use any excuse to get in the kitchen over the weekend and bake and am always happy to bring out my ultimate double edge brownie pan. Baking relaxes me, I can turn my thinking brain off and follow a recipe with the reward of great food.
When I made these Milo Brownies anticipating a very difficult week at work and I am sure that it was the magic of these Milo Brownies that delivered a reasonably calm work week for all of us.
Milo Brownies
3/4 cup plain flour
3/4 cup sugar
3/4 cup Milo plus 2 teaspoons for sprinkling
1/2 cup cocoa powder
2 eggs
1/4 teaspoon bi-carb soda
1/2 cup dark chocolate chips
1/2 cup butter, melted
Pinch of salt
- Preheat oven to 180 C. Line a square baking tin with baking paper and set to one side.
- Melt the butter and leave to cool. In a large mixing bowl, sift the flour, cocoa powder, salt and bi-carb soda and combine.
- Pour the cooled down melted butter into another large mixing bowl with the sugar. Beat in both eggs, one at a time, until creamy and combined.
- Pour the dry ingredients into the wet mixture gradually, stirring each time you add a little bit more to make it nice and smooth.
- Stir in the chocolate chips and finally, fold in the Milo.
- Pour the brownie mixture into the prepared baking tin and bake for 20-25 minutes (longer if you don’t like gooey brownies).
- As soon as you take the brownies out of the oven, sprinkle the remaining 2 teaspoons Milo over the top. Leave to cool.
